pepper jack mac

I had this for the first time from the Southern Sandwich Company food truck at OFF THE GRID.
It was amazing and I had an epiphany.  You can make mac n cheese with ANY cheese.  My recipe for pepper jack mac isn’t quite right yet…a lot more experimenting with cheeses to come! :)
